Hoi thod translates as fried oyster, and that is exactly what Mr Mong has been serving for over 30 years. Order the omelette with crispy or soft fried oysters or have it with mussels instead. His recipe has never changed throughout the decades, though he has passed the cooking to an apprentice who maintains his standards. This specialty of the house is made with fresh oysters fried ‘til crisp with egg and a sticky sauce. But in case you don’t want oysters, opt for the mussels instead.
